How to do Kungfu black tea rolling in China :
Whether the rolling is sufficient has a great influence on the fermentation of Kung Fu black tea.
If the twisting is insufficient, the cell damage is insufficient, which will lead to poor “fermentation”. Usually, kung fu black tea needs to be twisted 2 to 3 times. The degree of twisting is based on the cell tissue destruction rate of more than 80%, and the leaves are more than 90% into a strip. Juice overflow rather than drip flow is moderate. Taking the production of Qihong as an example, the 90-type rolling machine is specially used for twisting, and the delicate leaves (special and first-class) are not pressed for 30 minutes for the first time; 30 minutes for the second and third times, and 10 minutes for each , Depressurize for 5 minutes and repeat once. For general leaves (levels 2 to 4), knead for 45 minutes for the first time without pressure, twist for 45 minutes for the second time, press for 10 minutes, reduce pressure for 5 minutes, and repeat 2 times.
